The Water-Based Decaffeination Process
Water decaffeination is one of the most trusted and widely used methods for producing high-quality decaf coffee. It relies on a green coffee extract, a water-saturated solution containing all the natural solids found in green coffee—except caffeine.

The 4 Stages of the Mountain Water Process
Steam Treatment
Each 5-ton batch of green coffee is exposed to steam, making the beans more permeable for caffeine extraction.Immersion
The coffee is immersed in a specialized green coffee extract at 60°C. Through osmosis, caffeine naturally migrates out of the beans into this solution. A carbon-cellulose filter then removes the caffeine, and this cycle continues for 24 hours until the desired caffeine level is reached.Drying Process
The coffee undergoes a careful drying process over four hours:Pre-drying in a horizontal dryer to remove excess moisture.
Vertical drying at 60°C for two hours to reach an optimal humidity of 10-12.5%.
Final drying in a cylinder at 25°C to return the beans to room temperature.
Cleaning
The decaf coffee is polished and cleaned to remove any remaining membrane residue, ensuring it’s ready for packaging and brewing.
